We bill for SaaS on the last day of the month for said month. If a customer begins service with us in the middle of the month, do I have to manually adjust the prorated price or does QBO have an option where I can enter the start date and it will calculate the prorated amount automatically for the initial invoice?

The option to create a partial recurring invoice is unavailable. Thus, you'll have to manually adjust the amount entered on the invoice in QuickBooks Online (QBO).
You can follow these steps to edit a recurring template:

Once done, change this again to the original template. From then, you can normally run the recurring invoice with the full and correct prices. Then, if your clients decide to pay, here's a helpful article to help you about recording and receive invoice payments in QuickBooks Online.

So basically, I will have to manually adjust the second invoice after the initial prorated invoice is generated, correct? I was looking for a solution to just add the start date and for QBO to prorate the monthly price for a new customer. I'm guessing this is not possible?

Yes, you're correct! That's the option we currently have in QuickBooks to enable you to adjust the invoice. I understand how beneficial it is for your business. Thus, I also encourage you to send feedback on this option. The more requests it gets, the higher they will add it to future enhancements.
