I'm having a little trouble at the moment. Over the new year we changed from a 9 digit invoice number to a 10 digit invoice number. When I go to enter the invoice number for invoices, I can put in the correct 10 digit invoice number. However, after I click save and new, the next invoice has an invoice number of "1". It did not increment it with 1 more digit.
Any help would be greatly appreciated. Thanks!

There is a third possibility: It's a bug.
And, in fact, that is the cause. There is no reason to try to fix the file or fix the QuickBooks installation.
This is easy enough to reproduce. It took me 30 seconds. You could have done that too before answering the question.
This is a longstanding QuickBooks bug and is easy to duplicate. I duplicated it before writing this answer in QuickBooks 2011 (the oldest I have), QuickBooks 2017, and QuickBooks 2020.
All it takes to duplicate the bug is to create a new invoice with any 10 digit number:
Step 1: Create a new invoice with the number and save it.
The next invoice will be numbered 1.
It seems the math to add 1 to is just too hard for QuickBooks. :)

There are two possible reasons why the invoice number didn't move after saving invoices. It could be:
To determine whether is this a data or product issue, we can do a few troubleshooting steps. We can open a sample company file to see if the invoice number will move after saving another one.
If the invoice numbers work properly in the company file, we can conclude that this is a data issue. We can go back to your company file and do the Verify and Rebuild process. This'll fix data integrity issues on your file.
