Does anyone know about or have experience setting up statistical accounts in QB? It does not appear possible. I'd like to track things like hours and utility consumption.

At this time, there's no way of creating an account for Statistics in QuickBooks Desktop. Your only options would be Income, Expense, Fixed asset, Bank, Loan, Credit Card, and Equity. I recommend checking https://apps.intuit.com to find an app that has accounts that can record statistical information.
I understand how this could be beneficial to you and your business. If you'd like, I can submit feedback to our product development team, so this could be considered in a future update.

Please add my vote in for statistical accounts in QB!
I use two kinds of statistical accounts:
--Volume accounts: Act like revenue and expense accounts that accumulate via transactions over the month and clear out at the end of the month.
-- Balance accounts: Act like balance sheet accounts that are measured at a point in time like month end.
Transactions (whether expenses or sales or journal entries) can book to both money and statistical accounts. Examples: booking hours worked AND billings or Inventory units AND cost.

You can track non- financial data by setting up an account and contra account.

Add my vote for this feature too. It will be useful to track billed hours, headcount, number of app users, etc.

We have built a tool for such functionality for further analysis. If you have a use case, we can get on a call and you can use our tool.
I have had to move several of my clients to something other than Quickbooks due to the inability to track statistics. I have seen a workaround that is very clumsy, but you can clean it up by exporting reports to Excel before presenting. That is to use "Other Expense" as the type and set up both the account and a "contra-account" as the statistic. Dr the account and Cr the "contra account" for the statistical value. This will net to zero on for income purposes yet let you save the statistics needed.
