While the add subtotal option isn't directly visible, you can access it from beside the Add product or service dropdown arrow. I can assist you in accomplishing this QuickBooks Online's (QBO).
You can refer to the steps below to add a subtotal line item to your invoices. I've also added a screenshot after the steps.

I use the "Add subtotal" feature on a regular basis, however, the functionality has changed it has become very tedious to use. We used to be able to insert the subtotal line directly in the line where you need it, being where you place your cursor within the invoice. Now, the subtotal line gets added to the very end/last line of the invoice and it has to be physically moved up to the line where you need it to be inserted. Why has the functionality changed and can it be changed back to the previous way to enable a much easier way of working within an invoice? Some customers have very detailed invoices and include several line items /pages so this becomes very tedious and time consuming when editing these long invoices.
