We use a different system for the tuition payment, so when we post the amount relating to the hours worked in the other system, it's an offline payment that doesn't show as a transaction on QB from our bank account. I know a way on how to record the transactions in QuickBooks, tsva2008.
Since the transactions are internal records, we can enter them as journal entries. I'll guide you how.

So should I debit the concession expense account and credit tuition account? or the other way around?

To help you in determining which account needs to be debited and credited, I suggest reaching out to your accountant. They'll be able to provide you the best course of action for your business, especially in dealing with Journal Entries.

Once you've confirmed the accounts to be debited and credited, you can proceed with creating the JE by following the steps shared by my peer above.
