You'll want to review the Default email message on your sales form delivery method on the mobile app to check if there's an extra text from there. Then, change it if needed. Here's how:
Once done, you'll get rid of the extra text showing on your estimate and invoice email. Here's an article you can read for more details: Customize invoices on the QuickBooks Online mobile app.

WOW….I could’ve answered this question better and I’m not a QB “employee”!!! The question was why the estimate is being emailed with a “text version” and then the PDF version below. It looks horrible. It has nothing to do with the email or estimate message as you suggested and everything to do with the fact that QB can’t fix it!
