QuickBooks Online and QuickBooks Self-Employed are two separate platforms and subscriptions. Hence, we won't be able to switch or convert what you've sign up for.

After that, you can already sign up for QBO Simple Start plan:

If you have to open a new QBO account, make sure to click the Buy button to get the discounted price for up to 6 months. If you purchase from the trial account, you have to pay the regular price.

The Simple Start option does not appear in this link. Where can I find it? I tried searching and I can't find it anywhere.

If you're unable to sign up for the Simple Start plan through the QuickBooks website, I'd recommend contacting our Sales Support Team. They set it up for you. The contact information is available in the link I've mentioned above.
After that, you can continue switching from QBSE to QBO. You can use this additional link to complete the process: Switch from QuickBooks Self-Employed to QuickBooks Online.
