What @Malcolm Ziman said is accurate, your accountant will be able to do everything a master admin can as well as more.

Will they be able to see sensitive/confidential information ex. social security numbers of my employees, bank account numbers, bday, addresses etc.?
I'd like to know also if they can see user/admin information (if they have all master control then im assuming yes?) & QB does allow for 2 accountant users, so can the accountants see the other accountants info?

Nice to see you in the Community! I will be happy to share some information here. If the user is a regular accountant, they don't have access to make changes to the company file, like removing a user and so forth. The most they can do is review your books, make corrections and collaborate on any issues. However, if they are admins, they do have full access, as my colleague mentioned.
To answer your second question, regular accountant users don't count towards your usage limit unless you make them a company primary admin or standard user. If they are, then yes, they can see each other information.
