You're able to choose which account you want to connect when activating your bank account in QuickBooks Online.
Here's how:
Once you're connected, QuickBooks automatically downloads the last 90 days' worth of transactions. After that, you can now categorize the transactions. For more information about categorizing data and other related topics, refer to this article: Match and categorize bank transactions.

I'm using QB online. The "add account" option is not available.
It did not work. The download took entries from multiple accounts.
This did not work. In fact it seems to have pulled deposits and payments from multiple accounts.

I'm happy to help you figure out how to connect the correct account with the right transactions.
First, I need you to verify that you were able to select the account you required transactions from when following the steps above. Can you provide a screenshot of the page described in step 5 above? This will allow me to see if QuickBooks is connecting your account correctly. In the meantime, I recommend disconnecting your bank account and reconnecting it in a private window. You can do this by following these steps:
To reconnect it in a private window, you'll want to click the three dots or dashes at the top of your web browser screen. Then, hit the private window or new incognito window option and sign in to QuickBooks.
Now you can connect your account without the web browser collecting cache and cookies and get the correct transactions uploaded to your QuickBooks Online account.

It seems like you've connected a parent account, Brian49.
Although, we'll have to ensure how your bank sends the transactions by reaching out to them. If it only sends to the checking account, you're right with connecting it. All transactions from other accounts or sub-accounts will be downloaded to the parent account. You can check this reference about the bank or credit card subaccount setup for more information.
Once it's all good, you can already assign, categorize, edit, and add your downloaded banking transactions.
