First off, please note that if the two gas stations transactions are past ones, some banks permit QuickBooks to download for up to a number of days. Also, there could be an issue with your bank connection at the time when the transactions are downloaded to your QBSE, causing some entries to be missing.
Meanwhile, you can manually update the connection of your bank to see if the missing entries appear after a refresh. Here's how to do it:
1. Go to the Gear icon.
2. Select Manage accounts.
3. Click Refresh all.
Once done, navigate back to the Transactions menu to verify whether the missing transactions are now visible.
Alternatively, if the transactions still aren't showing up, you can manually import them using a CSV file.
Moreover, it's important to categorize once your downloaded transactions are in to ensure that your financial records are accurate.

I have completed the redownload/refresh transactions option for my bank accounts as well as the QuickBooks application multiple times over the last week or so. The missing transaction is NOT there, although I can see it in my transaction list from my actual bank app. This date for the transaction is only in the last 3 weeks, so it should be fine. I am concerned that there are more transactions missing, and have not been discovered due to lack of receipt to track. This rather defeats my faith in the app being accurate. That's my biggest concern going forward.

I'll share some details on why some of your bank transactions are missing, and I'll help you upload them into your QuickBooks Self-Employed (QBSE) account.
Beforehand, please note that the syncing of bank transactions in QBSE will depend on your credit card. Thus, you can sign in to Chase’s website to check if there is any ongoing issue on their end.
On the other hand, I suggest reviewing them on the Transactions page. Make sure to apply the accurate filters, including the closest date, account, and saved entries.
If you can't still see those transactions, your browser may be causing the problem. In this case, I suggest locating your missing transactions through an incognito window to confirm if it's a browser-related issue. Use the following shortcut keys:
Once you're in incognito mode, manually refresh the connection again and make sure the filters are correct. Kindly review your transactions. If this works, go back to your regular browser and clear its cache. You can also use another supported browser as an alternative.

Apparently QBSE hates all Speedway transactions since 2/2024. I confirmed that Chase has several more between 5-9/2024 on their end, and none if them show up in QBSE, despite there being no obvious other missing transactions.
I did what you said with incognito, filters, etc, with no change. Before I download a spreadsheet, will this create thousands of duplicate entries that I'll have to manually delete?
It will create duplicate entries if the transactions you're uploading are already in your QuickBooks Self-Employed (QBSE) account, @bigfoototaz. However, we can prevent this from happening. I'll go over some details to explain it further.
When you manually import bank transactions into QuickBooks, you'll have the option to review the transactions before they are fully imported. To ensure only the missing transactions are imported, download them from your bank first using a CSV file. Make sure the date range only includes the transactions that didn’t upload automatically.
When you upload the file, QBSE will display a list of the transactions you are about to import. At this stage, it'll often flag potential duplicates based on transaction amounts, dates, and descriptions. QuickBooks allows you to review the uploaded transactions before adding them to your account. You can manually deselect any duplicate entries or that you don't want to import.
When it's finished importing, it’s still a good idea to carefully review your data. This is to ensure you're not overlapping any existing entries. If there are any duplicate transactions, you can delete them.

Once everything's fine, make sure to categorize your transactions to put them in the correct accounts.
