Why are so many transactions just listed as "Debit card transactions"? I have to go through my PayPal and reconcile everything in order to know how to categorize it??

Some transactions come through with the name of the company, but more often than not, they only say "debit card transaction" - what's the difference and how can I not have to go through every single purchase?

Your transactions are listed based on the data they bear, taniadakka.

QuickBooks Self-Employed is dependent on the information sent to us by your bank, or in this case, PayPal. If the system is unable to retrieve any details on the transactions, they'll show as "Debit card transactions". You may see them with complete details in the PayPal interface, but the sent data is the only thing we can display in the Transactions section.

You can also check about categorizing transactions in QuickBooks Self-Employed for your additional reference.
