Hi there, pimpurrito.
I appreciate you for providing detailed information on what you've already performed to fix the error message.
We need to make sure your Mac version meets the minimum system requirements for Adobe Reader. This is to ensure you're able to avoid any issues and errors when printing payroll. In case your computer is not compatible with the Reader, I suggest contacting Adobe support again to check for other options. Then, If you're using Big Sur, the compatible readers are: Acrobat Reader DC, 2020, and 2017.
Please refer to the articles below to see different information on what’s new and improved in the latest updates to QuickBooks Desktop 2021.

Hi there, pimpurrito.
Have you tried uninstalling and reinstalling the program? This process can resolve some of the most common program issues when using QuickBooks.
Also, make sure that you have your QuickBooks Desktop download file (or installation CD) and license numbers ready.
Then, follow these steps on how to reinstall the program:
Once done, You need to remove both PLIST* files from the User and System folder. Once removed, all preferences will revert back to its default settings. This can cause your QuickBooks to be unregistered. Here's how:
Note: XX is the QuickBooks version you’re using.
After that, restart your device before following the steps in this article on how to reinstall QuickBooks: Install And Set Up QuickBooks Desktop For Mac.
Once done, print a sample payroll transaction again to check if the error is gone and you're to do it.
Please don't hesitate to reply again if you still need more help with this.
