I can share some information about the convenience fee feature, @Northeast.
The convenience fee for credit option is a beta feature in QuickBooks Online (QBO) that is no longer supported. This is due to requirements from the card brand network.
In the meantime, you'll want to create a service item for the convenience fee and manually add it as a line item on your customer's invoice. Here's how:
See this article for more information about adding a service item in QBO: Add product and service items to QuickBooks Online.

Are you running a B2B or B2C company? You may consider having a 3rd party solution to integrate with your QBO as a workaround.
In the past, I was able to turn on adding a connivence fee to each invoice through Quickbooks Sales settings. Why did this feature go away? QuickBooks does not bear the burden of complying with state laws regarding how and when to pass along the fees to customers rather the company charging the fees. Why remove the choice to add a connivence fee...as it is the company's choice not QuickBooks.
This forces my company to find another payment solution as QuickBooks Payments is not flexible enough for our business. And now they want to raise the monthly subscription charge...boo QuickBooks...boo.
