I'm still on essentials, and somehow (maybe by my insistent pestering) I have access to the old layout again. I have other colleagues who do not have that option though.

Let me share information that help you clarify things with regards to the option to switch to the old Layout in QuickBooks Online (QBO) Essentials.
The option to switch to the old layout is not a glitch since US QBO customers will be migrated from the old/classic invoice/estimate experiences to the new experiences. This notification outlines the new features and changes. As migration progresses and more features become available on new experiences, the option to opt-out will no longer be available to customers.
Eventually, it's not necessary to upgrade to a QuickBooks Essentials subscription since it will also be migrated to the new invoice experience with no option to go back to the old layout. However, there are still QuickBooks Essential users who have the option to switch back to the old layout since the updates are still ongoing.
If you're still adapting to the new layout, I suggest using a third-party app in the meantime to help you manage your invoices and estimates more efficiently. You can search for applications through the Apps menu of your QBO, then click the Find Apps tab. You can also look here in our QuickBooks Online App Store.

Do you all even read before replying? Your reply has nothing to do with the actual issue. We don't have a problem with how the layout works, we have a problem with a critical bug that keeps enabling Custom Transaction Numbers when the new layout is enabled. Intuit is making a serious mistake by not fixing this bug and forcing the new layout on everyone. This breaks any integration that uses the API (all of them?) and makes it useless. Keep ignoring the issue and people will be moving to other platforms.
Switching back to the old layout is an option to fix YOUR glitch. The glitch is the inability to turn auto invoice numbers on and off, this option is unnecessary, just leave the auto numbers on or just leave the option out,.
Our settings flipped flop in the MIDDLE of a support session with QBO support staff and I have screen shots with times to show it flipping on and off.
At this point, I can't even remember if it should be on or off.
Just upgraded to QBO PLUS at additional cost to get the option to shut OFF the new template. Let's see if money can buy a solution!

Did upgrading actually work in stopping custom transaction numbers from being turned on by Quick books without consent?
If you shut off the new template and view an invoice that was created with the new template in the past does it still turn on custom transactions numbers?
I cant answer to the upgrading, but in my case, Intuit was able to get me access to toggle the new/old template. It doesnt matter where the invoice was created. An invoice created with the new format, then switched back to old format will NOT turn the custom transactions number flag on. The switch back on ONLY occurs while using new template.

You don't need to upgrade to be able to disable the custom numbers feature. The said functionality can be turned off by going to the Gear icon. then selecting Account and settings. Go to the Sales tab. Then, toggle the Custom transaction numbers button to Off.
If it's already turned off, yet, the system still reverts it automatically, I suggest performing some troubleshooting steps to isolate the issue. To start with, let's use an incognito or a private window:
When the setting sticks, go back to the regular browser and clear the cache. After clearing, close out any browser instances to complete the process. We can also use another supported browser as an alternative.
If the issue persists, I recommend reaching out to our phone support team so we can investigate this further. You can do so by clicking the ? Help icon.

I had requested that access, and they said they couldn't do it. Do you know what support rep you talked to? Also, Can you provide the steps you took to turn the old template back on once they gave you access to the old template?
This issue is not a caching issue, so please either correct your post or remove those steps so you don't confuse your customers. It is very concerning that Intuit and the Quickbooks team are not aware of this major bug in their system. I shall explain it again. When you have custom transaction numbers turned off in the settings and then you view, edit, or do anything with an invoice in the QBO, the Quickbooks system turns custom transactions numbers back on without user consent. Users must then go back into settings and turn off custom transaction numbers. This is causing hours of additional working during the day for your customers since invoice numbers are automatically incremented with custom transaction numbers turned off, but need to be manually entered when your buggy system turns them back on. No. One day my company file had the toggle switch returned, so I clicked back to the old format, and it (so far) has stayed there since.

That "old" format only became available to us after we upgraded from QBO essentials to QBO Plus...which is - frankly nuts...but that "old" format appears to have solved the bug...
But, but, QBO needs to RESOLVE this bug and its issue.
We only got access to the OLD template by PAYING to "upgrade" from QBO Essentials to QBO PLUS at a cost to our small company that we really cannot afford.
Nevertheless, there is a BUG and forcing every one of the customers on this thread to pay $300 (or so) additional per year to get an old template is crazy!
For now - we wanted to see if that old template actually stabilized and solved the problem.
And it appears to have solved the problem.

Quick answer - upgrading appears to have worked. Long and short of it. Yes.
Not right. But it worked.
So just to be clear.
To be able to use an OLD (but stable) template, you must upgrade to a higher cost product.
How ridiculous is that????

I just upgraded, but the additional cost of $360/year is well worth the price compared to the amount of man hours we have lost having to constantly turn custom transaction numbers off.
After I upgraded I had to go to Sales->Invoices and then click the Create Invoice button. Once I did that you will have a button that says Old Layout at the top right of the New Invoice screen. Click that button and then you will be prompted to provide your reason for going back to the old template. This was my reason: "The new layout is broken. There is a MAJOR bug that keeps turning on custom transaction numbers. All of your customers need custom transaction numbers turned off. When you turn off custom transaction numbers in settings QBO turns them back on every time you view, edit, or do anything with an invoice. The new layout is crap and needs to be deleted from your system."

I was running into this same issue. I had turned off custom transaction numbers under Company Settings>Sales only to see it turn back on using the new invoice template.
I think I may have found a solution. It looks like the the setting is now also attached to the template. I you go to Custom form styles>Content>Header, then you can uncheck the Use custom transaction numbers option.
This seems to keep custom transaction numbers off for me, hopefully they stay off!
