I’m here to walk you through how to log out from your account in QuickBooks Online.
You can simply click the first letter beside the Gear icon that indicates the first alphabet of your first name. Then click the Sign Out button that will take you to the Sign-in page again. I'm including an image below that displays this option:

This button does not show in Safari on Mac. When I use Chrome, my initial does show up next the the gear icon, and I can log out. NOT in Safari.

Based on the information you shared, it's possible that an issue in Safari is causing the Log out button to disappear. You can switch to a private browsing session and check if you can log out from there.
In the Safari app on your Mac, choose File and select New Private Window. Once done, log back in to QBO and check if the log out button is already showing up.
If you're able to see it, go back to regular browsing and clear all Intuit or QuickBooks-related cookies. Here's how:
After that, open your account once again and check if you can see Log out and all the buttons in QBO.

Are you using QuickBooks Online Payroll standalone? If so, we have an ongoing issue with the missing Logout button. I'd suggest contacting our phone support team so you'll be added as one of the affected users. Here's how:

You can also use a different browser like Microsoft Edge or Mozilla Firefox.
