The QuickBooks Online (QBO) Windows and Mac desktop apps are no longer supported beginning April 20, 2021. You can find more details about the support and update discontinuation with this article: QBO Desktop App update.
I can certainly understand how our QuickBooks Online desktop app comes in handy to you and others. Not to worry because your QBO account isn't affected by this change. You can still sign in through the app or a browser.

If no longer supported - why are auto updates still being pushed out?

As per my colleague, LieraMarie_A discussed above, the QuickBooks Online (QBO) Windows and Mac app is no longer supported. That being said, you'll no longer receive any updates. You can still use the app as long as it's installed on your computer. However, assistance for fixing the errors encountered is also discontinued.
You can also access your QuickBooks Online account using the supported browsers listed in this article: System requirements for QuickBooks Online, Accountant, and QuickBooks Self-Employed.

Version 4.2.1-79 opens and operates correctly. It is when updated to Version 5.1.0-95 that it crashes on startup.
Can you tell me how to stop it from being updated?
In my environment - the update popup notification does not provide the option to refuse. I can either "update now" or it will "update when restarted". It updates on it's own the next time I startup.

Let me share additional info and help you regarding the QuickBooks Online Desktop App.
We already stop the support of the QuickBooks Online Desktop App last April 20, 2021. Although you can still use it, it may result in some errors since there'll be no more software updates and bug fixes.
The app does not have an option to stop it from updating. However, this update you're referring to could have been the previous release that is not installed on your desktop. Please note that after April 20, 2021, Intuit will no longer be pushing any updates to the app nor supporting any bugs or service requests.
It's highly recommended to access your company data using a browser by signing in at qbo.intuit.com.

If support and updates for qbo stopped in April, WHY then did intuit send an update on JULY 2 2021????
I was stupid enough to believe Intuit lies beginning when you pushed us to QBO saying the desk top version for MAC would no longer be updated and this would be better sometime around 2018. Then "lo and behold" here comes QBDT for MAC 2021!!
Now you've TRICKED users to an update last JULY that does not work and we are left with CONSTANT NAGGING of "update is available" and/or "Auto updating" during power outages.
PLEASE, PLEASE tell us where this v5.1.0-95 Update is on my hard drive so I can delete and STOP the update NAGS.
Telling users to just use a browser is not an acceptable answer!!!
