I am migrating from QB online back to my desktop QB 2018, I realize it's outdated and that no support will be available. I'm hoping someone can walk me through this. I have had people offer to help for around $500 and this is not affordable.
I have already exported lists from QB online and understand that I need to put them into desktop version. I have data starting at January of 2021 in the desktop version.
How do I add the excel data? When I go to import it, I get to the part about mapping and don't understand what I need to do. I don't want to mess it up.

Yes, you're right. QuickBooks Desktop 2018 is no longer supported, and support is no longer available. I understand the need to move back to the desktop version. I'll provide steps to do this.
First, sign in to QuickBooks Online (QBO) and download the migration tool:
Next, prepare the file for export and choose your data in QuickBooks Online for export:
After that, run the QuickBooks Desktop migration tool:
Please note that it may take some time for this process to finish. Even if it looks like it's frozen, it doesn't mean the export has failed. Give it a few minutes, and the progress bar will move again.
For more details about the process, please see this article: Move your QuickBooks Online Data to QuickBooks Desktop.
After you export your company, run the Profit and Loss report in both programs to verify if everything matches.
In addition, I've added a resource that'll help you find out how your books will move to QuickBooks Desktop: Get more Info about what Data Does and Doesn't Export from QuickBooks Online.

Your QBD 2018 is outdated and you have to manually migrate your data. If you want to do it yourself, you can use a migration tool. TPExporter for Desktop, TPImporter for Online.

Another option, you can find QB Desktop 2020 or a newer version. Then you can buy a 3rd party conversion service. It costs less than $500
This was very helpful and I can see everything including the last invoices I created so I appreciate your help! I noticed sales tax is no longer on invoices when I want to create a new one, is that something that doesn't migrate over?
Actually - I see tax on the invoice under other line items, it's just not at the bottom as it was in the past. I don't think that's a problem so disregard that last comment. Thank you again!
