How do I change the automatic filled section of the email for the payment receipt? I can find Invoice and the lot but can't find the actual 'payment' receipt for the life of me.

For now, the option to modify the autofill section of the email for the payment receipt is unavailable in QuickBooks. Although, you can edit this part before sending the payment receipt to your customer.

Is there a way to print out the memo from customer payment screen on the payment receipt?

You'll be happy to know that the Memo field is included when you print out the payment receipt. Just enter a description, then click Print. You'll then see it on the Print preview page. See the attached screenshots below for your visual guidance.
