It is happening to me that I put the ship-to address using the corresponding fields as it is shown below:
But as soon as I tap OK and try to Edit the address again all fields get copied to the "Address" section, except for the "Note" which goes to the city field, see the image below:
Any thought? This is causing me a problem in the integration with a third-party application.

This is actually pretty normal behavior, especially using the values in your example, which are non-standard. Particularly "zip" for the zip code instead of five numbers.
The crux of the issue is that QuickBooks doesn't really store the data in the individual address fields, but instead stores addresses as five lines of text. Then, when opening the Edit Address window, it attempts to parse the address using USPS address formatting rules (mostly) as QB understands them.
This is true except for Employee addresses, which are entered in individual fields and are double-stored, both as individual fields (the primary fields) and as derived text to be used on transactions like checks. But that doesn't really impact your case...
If you're importing international addresses, you'll find that QuickBooks is particularly bad at parsing them. I don't think it was ever intended to work for anything other than US & Canadian addresses. Possibly Mexico as well.
Imported addresses should be treated exactly like addresses entered in the address block within QuickBooks, which is just plain text either way.
Note it's perfectly OK to not use the Edit address window at all, and just enter or edit the addresses in the 5-line address block.

This was happening to two of my company files. I tried in one of my company files and this helped me, but in the other one it didn't got fixed...
Is there anything else I could try?

I understand what you mean, but I gave you an example info in those pics, but my company files has the info in the expected format and it is happening too...

I appreciate that you checked your other company file to compare the results. Let me help you check this further.
What you can do is copy the billing address to the shipping address field by clicking the Copy>> button. Then, edit the copied address and enter the correct one, and then click OK. After that, open the customer profile and edit to see if the shipping address details are in the right fields.
If the same thing happens, you'll want to update QuickBooks or repair it when the update won't resolve the issue. Please consider backing up all your company files before repairing QuickBooks.
