I know how beneficial it is to your business to turn on the Multicurrency feature. However, this is unavailable in QuickBooks Desktop for Mac version. This feature is available in QuickBooks Desktop for Windows and QuickBooks Online versions. With this said, I'd recommend sending this request straight to our product engineers through feedback. You'll want to check for a third-party application that can help you with this one. You can check out the apps that are compatible with QuickBooks at this link: QuickBooks Desktop App Center. Just to enter a keyword in the search bar or browse through the categories to filter the results.

QBD Mac doesn't support multicurrency feature. Consider to use QBD Windows to run on Parallels as a workaround. You can still purchase the one time license for QBD 2021 Pro if required.

I have Quickbooks Desktop Pro 2021 using Win10 on Parallels. I've used Quickbooks Pro since 2005, sadly, in a Windows environment.
This is the only reason I have a Parallels VM on my Mac now.
Quickbooks will not let me break free of Windows.
