QB is choosing the business address and telling your mail client to use it via Applescript. Unfortunately there is a bug in Apple Mail where it assigns the wrong email address. I'll write up a bug for this but its been difficult as Apple Mail changes with each macOS release and I don't think Apple is testing the AppleScript interface adequately.

Since the email address you choose from your From drop-down list is changing to a different selection other than what you chose, I'd recommend troubleshooting with the Verify Data utility. This identifies known issues within company files and advises users if their Rebuild Data tool needs to be used afterwards.

If you see a "Your data has failed the integrity check" message, you'll need to rebuild your file:
In the event your From field keeps changing the selection you've entered, I'd recommend getting in touch with our Customer Care team. They'll be able to pull up your account in a secure environment, conduct further research with you, and create an investigation ticket if necessary.

We're trying to assemble and example to send them. But it is a little difficult to convey (best to send them an Applescript that demonstrates it but Mail has to be set up in particular way we think). Do you have any mail accounts that are disabled in Apple Mail?
