By "in the field" I mean taking payments remotely while on a job site. I think you are correct that gopayments would be the path to look into.
Is there any way to find a ballpark estimate of the rates I can expect if I charge more than the $7500/month? I want to do a comparison with the merchant rates from my bank before I make a decision. However with the effort I have had to put in trying to get an answer on this, I assume that it is a reflection of what Quickbooks customer support will look like as well. Which isn't very comforting.

I have tried what you recommended. The person I spoke with couldn't give me an estimate. She would only tell me the rate that is posted on the site (2.4% / 3.4%). After not getting an answer from her I tried doing an online chat, but a person never came into the chat. I was held in the "5 minutes" screen for 30 minutes. I ran out of time and moved on.
All I am looking for is some rough details on the claim for the 40% discount if I charge more than $7500/month. From looking around, it sounds like I would need to do more than $7500/month for 3 consecutive months. But I can't find the information on the discount. Is it a tier system? I.E. $7500 = 2.2% $10k = 2%? Or is it a straight 40% off the 2.4% making it 1.45%? Do they add any monthly fees to get the discount?
For example, I can get a quote from other merchants like "expect to pay interchange + .1% and $0.15 per transaction with $15/month access fee."

I am reaching my wit's end. Got the run around from a support agent in a chat who told me to call the merchant department, but isn't allowed to give me the number. I went through the help option to request a callback. It failed and told me to call a number. I called and it told me to go to the help option on the website and hung up on me.
Seriously, all I am looking for is an idea of the discounted merchant rates, just an idea, not hard set rates. Am I being so unreasonable that I want to compare the potential rates to another merchant? I feel that I am asking QB to reveal some DEFCON 5 level military secrets.
It seems like using gopayments would be such a great idea and a time saver with how it integrates into my bookkeeping. But man, this process is not making quickbooks look good.

After days of being given the run-around and hours of wasted time on the phone with different departments who just pushed me to a different department, I finally gave up and went with a different merchant. It is so disappointing because the integration with quickbooks online would have made my life a lot easier. But I just couldn't trust that I was going to have a good experience with gopayments.
I feel you. I wasted days trying to get an answer. Finally gave up and went with another merchant processor. I couldn't trust that I would have a good experience with gopayments when they wouldn't answer a simple question.
The best answer I could come up with was that the discounted rate is a surprise that I would only learn about once I qualify for a rate review. Until that time it is a gigantic trade secret that only a few employees with high-level security clearance are allowed to know. I hope you can sense my frustration, I never wanted to use a product so bad and not be able to.

Had the same problem. Promised a reduction in our fees as soon as we processed at least $7,500 for three months straight. The kicker is when you comply with this, Intuit sends you to one of their sales staff who agrees to send the rate decrease request higher up. However, it invariably gets denied and you won't be allow to speak to the person that denied it. Instead, the Intuit sales person on the phone offers you some measly reduction which is made up by increasing your monthly fees or your service fees with some other type of credit card processing fee (that you use less)
You may explore other options. One processor offers 2.49% per transaction + monthly fees. If you process more than $50,000 per month, you may qualify for lower processing rates.
