Hi there, Towie. I'm here to help you get this resolved.

The error message you encountered indicates that you don't have the necessary permission to edit invoices. To rectify this, I recommend asking your QuickBooks Administrator to review your permissions and provide you access to modify the transaction without restrictions.
In QuickBooks Desktop Enterprise, the role that grants access to update invoices is the Accountants Receivable. To give this permission, please share these steps with them:
Once the necessary permissions are granted, you can start editing invoices.
For your reference about the process, please visit this article: Create and Manage Roles. It also includes steps to create a custom role.
It's also easy to create restricted user roles. It will help you control what they can and can't do within your books. To get started, follow the detailed steps in this article: Create Data Level Permissions.
