Let's change the category for your PayPal transactions, lauri-egan.
I've got two options to change the mapping of your PayPal transactions. If you're using the Sync with PayPal, here are the steps on how to change it.
From the App Center:

If you're using the Connect to PayPal app, please follow the outlined steps below:
With these instructions, you should be able to change the PayPal transactions into a different category in no time!

I do see the location on how to change the category. But do I have to go in and change this each time we change events?
For example:
Currently members are using Paypal for Donations to the organization. But in a few months, Paypal will be accepting payment for an upcoming on-line event. How do I best track those in different categories? Or if I have two different Paypal buttons active, then I need to categorize those Paypal payments into different categories (member dues, donation).
I don't want all Paypal transactions in the same category. Or is there a better way to do track these Paypal transactions into different budget categories that I am missing?

I will look into it. Not looking forward to paying more for an add-on when it seems like a simple solution that should be an option within Quickbooks already.

I know how beneficial it is to your business to automatically categorize the Paypal transactions every time you change events for accepting payments. At this time, this option is unavailable. You'll want to manually change the mapping settings each time you change events.
All transactions imported after the mapping settings changed will be imported using the new one. While all previously imported transactions will continue to remain in their appropriate accounts as per the previous mapping. Just follow the steps provided by my colleague to modify settings for Sync with PayPal. You can also try the recommendation provided by Fiat Lux - ASIA.

Thank you for your help and patience! I understand your response, but I am having trouble getting the correct Income account to be assigned to the Paypal Sales. When I go to Edit the Paypal Account Settings, it does not show all of my Income Accounts, so I am not able to change the Paypal Sales to my desired Income Account Category. See screenshot. That screenshot is only displaying a few of my Income accounts.

I recommend clearing your QBO Mac app's temporary cache files using the steps below:
Doing this will remove historical data so you can access QuickBooks with a clean slate. Issues like missing data or buttons are usually the result of outdated or corrupt cache files in your app. There's also a informative guide on fixing most app-related issues that I'm sure you'll find useful.
Additionally, you'll also want to make sure your desired income accounts are tagged as Income account type. Check out this article for the detailed steps: Add to or edit the Chart of Accounts.

Thank you for your response! I have included a screenshot here because I do not see any way to find the Refresh Data option in the Browser version of Quickbooks Online. I access QBO via my Safari browser on my Mac.
The account I am trying to change the Paypal Sales to is definitely marked as Income.

I appreciate you for clarifying things on how you access your QuickBooks Online (QBO) account. The steps provided by my colleague are only applicable to the QuickBooks Online app. To clear your browsing history in Safari on Mac, just follow the steps below:
In the Safari app on your Mac, choose History.
Tick the Clear History tab.
Click the pop-up menu.
Choose how far back you want your browsing history cleared.
To learn more about this one, see Clear cache and cookies to fix issues when using QuickBooks Online article. Then, go to Step 1: Clear your browser’s cache and choose Safari for Mac.
