Try the Audit Log and get the information to recreate the invoice.

I agree with Just_me. You may utilize the Audit log to get the information of the deleted invoice and recreate it. This report helps you keep track of added, deleted, and modified transactions, as well as user entries. It allows you to see the history of changes made to individual transactions or a range of multiple transactions. It can be customized by using the Filter tool to narrow down the data.

Once entered, you can record invoice payment or match the invoice with the deposit made by customer.

I am in a similar situation.
I deleted the wrong invoice. I went to the audit log, got the details. Then tried to recreate the invoice. I do that but it never saves it.
I'm wondering if it is because the invoice number used to exist? Or because I'm back-dating the invoice? I tried not back-dating it yet it still does not save.
Any advice?

Before we start, did you receive any error message when trying to recreate the invoice? Please know that you can save an invoice even if the invoice number is used or back-date the invoice. QuickBooks will just prompt a message that the invoice number is used, however, you can change it and then save it.
If the system won't allow you to save the invoice, it's possible that the browser you're using had a data issue. To verify, let's log in to your QuickBooks Online (QBO) account using a private browser. To do so, you can press this shortcut key on your keyboard:
Once logged in, go back and recreate the invoice again to double-check. If this works, they need to clear the browser's cache so the system can start fresh. If they get the same result while using a private browser, I recommend switching to a different one.

You may also want to view the status of your sales transactions in QuickBooks. You can go to the Sales menu and select All Sales.
