I feel similarly. For that matter, why can’t I send an estimate without QBO adding sales tax? My customers are often exempt, but not always. When they request a quote, I don’t want the hassle of having to go back and forth with them about exemption certificates when they may not even become a customer! It’s a huge waste of time. Thanks for joining the thread. I can see the importance of sending estimates on time. That said, let me share some steps to help with your task.
Switching back to manual sales tax in QuickBooks depends on your existing data. If you haven't entered any sales tax transactions yet, you can simply turn off the automated sales tax feature. However, if you do have existing sales tax transactions, you'll first need to delete them. Once all sales tax transactions are deleted, you can disable the automated sales tax system and switch to entering sales tax manually.
For step-by-step instructions on turning off sales tax automation in QuickBooks Online, see this helpful article: How to turn off sales tax in QuickBooks Online.

I am also looking for the old layout. I do not have the ability to switch it as instructed in this email thread.

I'd like to let you know that QBO Simple Start and Essentials accounts have already undergone a permanent migration to the new invoice layout. This means that it's no longer possible to revert to the old design if you are subscribed to either of these plans.
I also understand that getting used to the new design may time some time. However, it offers several benefits that you might appreciate over time.
