To update the email where you received notifications from Bill Pay, this is now automatically synced to your company's email, where QuickBooks can notify you. You can consider changing it from the Contact Info section in QuickBooks Online (QBO).

The first solution did not work, my info was already up to date in the main QBO settings.
The second solution, via the Merchant Service Center, did work! BUT with a little caveat. I had signed up for BillPay (to send ACH and checks to my vendors) but not Payments (to accept credit card from customers). I believe these services are linked but you do not get access to the Merchant Processing Center until you activate Payments, which I did just now.
If you need to change email for Bill Pay, you must activate Payments and visit the Merchant Service Center: http://merchantcenter.intuit.com/

You can change the Bill Pay email from the Merchant Service Center. Since you've already activated the Payments services, you're now able to modify the contact information from there.
Moreover, please know that you have different email addresses with your Payments account. Each one receives different kinds of messages.
