Allow me to share some details why you're getting zeroes under the specific customer that was tagged in a project when running a Statement of Activity report.
The amount that will show on the Customer column in the Statement of Activity report is for the individual sales recorded in QuickBooks Online. If you've created the transaction of the specific customer under the project, it will not show on the report individually instead it will show under the project's column.
As a workaround, you can export the report, and add the amount under the customer's name. I can share the steps on how to do that:

A great answer but not what I was looking for - I had reviewed your suggestions for help and know how to export and then hide the columns I do not want to see on the report. That wasn’t my question. I want to be able to modify the report so that I do not have the “Customer” column, only “Project” columns. I can do this in QB Desktop, there is a job profitability report. I cannot locate an equivalent report in QBO. Is this another area where QBO falls short of the capabilities of the desktop version?

QuickBooks offers a lot of great reporting functionality. The Job Profitability report is one example where you can view your contractors, service providers, etc. based on projects

The report in projects only allows me to run the report one project at a time. If I select multiple projects under the Customize function, it just lumps all of the income and expenses under one project name. The single project report is great but I want to be able to get that report format for multiple projects with each project occupying a separate column - basically what the customer statement of activity does only without the customer column. In the desktop version you could run a project profitability report that had all projects for a specific customer (or you could designate specific projects to include/exclude) without adding a separate column for any income or expense not designated to a specific project. That’s the report I want to recreate. I can send you an example of that report if it would help.

I do not even have a Statement of Activity listed in my reports and when I search, get nothing. How do I resolve?

I'll give some info about the report you're looking for.
The Statement of Activity report is only available if your company type is set to Non-Profit Organizations.
If you have a different company type, the similar report that you can run is the Profit and Loss. This will display your revenue, expenditures, and net income. Also called an revenue statement.

To clarify, is the Profit or Loss report listed instead of Statement of Activity? Currently, we have an ongoing investigation (INV- 58433) about Non-profit companies displaying the wrong labeling for reports. Rest assured that our engineers are working diligently to get it resolved.
I recommend contacting our Customer Care Support team so that you can be added to the list of affected users. This way, you'll receive email updates of the investigation's status and be notified once it's been resolved. I've included the steps below to contact support.

However, if you can't find whichever report, you may have accumulated too much historical data stored in your browser. I recommend clearing your browser's cache. This way, you can access QuickBooks with a clean slate.

There is no P&L or anything listed at all. The report was run by someone in the organization as I was emailed a Statement of Activity from a couple of months ago. I was just set up 2 days ago so it is not my browser either.

Is there any update on this investigation?
I have spent way too much time on costumer support and your techs don't know about this. They tell me it could take a week to a month for my statements to refresh. That isn't really ok when we are paying Quickbooks for a product and my clients are paying me to get them the correct reports.
This is not the impression we want you to experience when running a statement report, QMastaD.

Once it is resolved and you need to run a list of your statements sent to your customers in QBO, just pull up the Statement List report. This will give you the lists of all the statements you sent to customers during a selected time period, including the date. Here's how:
