Values such as Income/Expense Accounts, Cost, Price and Quantity-on-Hand can all be updated from the Gear icon (⚙) > Products and Services > Edit on the item you need to change. It's nice to have you in the thread, @steveschroeder1124. I can help with determining why the inventory on hand does not seem to be updating.
In an instance like this, I'd recommend running a Product QuickReport for the item to look at how the quantity is being adjusted. Here's how:
Select the Gear icon.
Click Products and Services.
Select the drop-down triangle under the Action column for the item and click Run Report.
