For the invoice form, income is driven by the item that is being charged on the invoice. Currently there is no way to list the income account itself as a line item.
You have to use either a service item, inventory item, or non-inventory item on the invoice and whatever GL account that items is linked to in it's setup, that is the GL account that will be affected.
