Some incoming Amazon transactions respect the default I've set while other transactions do not - there's some AI logic or rules happening behind the scenes that's setting the category to an arbitrary account. How do I stop that extra logic from happening?

With QuickBooks, the program can automatically remember your previous category selection of a specific transaction and apply it to the future Amazon app entries downloaded to your QBO data. That said, if these transactions are still in the Overview or For Review page, you can manually modify and categorize the entry to the correct account category.
However, if these data are already categorized, you can edit or undo the transaction, and add the right account. You may also review the app entries from your account registers and verify the accurate details recorded from there. Doing so will help ensure your books are correct. To do this:

Thanks, I do know how to edit after the fact. What I'm looking to do is change or delete the categories that QuickBooks has previously remembered for future transactions.

The option to delete the categories that QuickBooks has previously remembered is unavailable. Please know that the autocategorization in QuickBooks will be based on the categorization history.
You can manually correct it if the system suggests an incorrect category in the meantime. Rest assured, the more transactions that QuickBooks categorizes, the better it gets at categorizing.

Will there ever be an option to edit the autocategorization of Amazon app transactions, similar to Rules for online banking? The categories QuickBooks assigns are incorrect the vast majority of the time. QuickBooks also doesn't seem to be learning from my recategorization actions. We use Amazon Business extensively and it's becoming more inefficient to use it than beneficial, due to all the hand-editing that's required.

The autocategorization of Amazon app transactions in QuickBooks is currently available. At present, QuickBooks does not provide customizable rules for Amazon transactions as it does for online banking transactions.
Alternatively, you can manually categorize transactions to ensure accuracy in QuickBooks.
