I'd like to provide some clarifications regarding how mobile apps for QuickBooks work.
I can see the importance of being able to manage all your business entries from the app. However, QuickBooks Self-Employed mobile app is a simplified version of the program. Thus, some features are not available on the said platform.
To add tags or categorize your transaction as Charity, I'd suggest accessing your account from the browser. Just sign in through this site QuickBooks Self-Employed and categorize the entries from there.
Know that any information made on the browser will sync automatically on the app and vice versa.

The option to collate donations from Notes is unavailable in QuickBooks Self-Employed (QBSE). What we can do is manually add transactions in QBSE. Then, categorize the transaction into charitable donation or charity. Let's go to the Transactions page, then locate the data that you want to categorize. Then under Category and Tags, choose Charity.
You can also access the Business and personal expenses report by going to the Report tab. This way, you can review the data you've entered into your account. I've got articles here about categorizing your transactions:
