The Customer email and Cc/Bcc fields are no longer available in the new invoice layout window. However, you can still see these fields after clicking the Review and send when sending your invoice. Please see the images below for your reference.

Also, with the new version of invoicing, you can update and personalize your forms when creating them. All the tools you need to customize your sales are on the form itself.

So when creating an invoice how do I know if this customer has their invoice emailed or printed? The send later toggle and email address clearly visible notifies the user of how to deliver the invoice, email or print. How is this determined in the new invoice?
Allow me to provide more details about the new invoice experience, @Rasty.
In the new experience, you'll have to review the customer setup inside QuickBooks Online to determine how invoices will get to your customers. Inside the customer information on the Payment section, you'll see either Print Later or Send Later set in the Sales form delivery options field.
When creating a new invoice inside your company file, the easiest way to handle this is by clicking the Edit customer below the Billing field. For visual reference, see the screenshot attached:
