I am having the same issue. I have to go in and manually delete the invoice that has been created each time an estimate is accepted. I have only had QuickBooks for 2 months and it wasn't happening until 2 days ago. I wish this was not how this featured worked.

I recognize the difficulties that you have encountered. I'll share further information regarding the estimates functionality in QuickBooks to clear up any confusion.
Generally, this is not how the feature works if you are not using our QuickBooks Payments option. This will only occur if you have QuickBooks Payments enabled and your customer has made a deposit.
If the feature wasn't turned on, I'd recommend logging your account through incognito. Sometimes, too much cache build-up in your regular browser can cause unexpected behaviour in the product. This way, we can check if it's a browser-related issue.

Once logged in, create a dummy estimate, then accept it to verify if it's already performing well. If it works, return to your regular browser and press the CTRL+ Shift and Delete keys on the keyboard to clear the cache.
If the problem persists, your account must examine in a secure location. With this, please call or chat with our support teams for help. They can check this to see why it converts automatically even if the consumer has not made a deposit or QuickBooks Payments is disabled. Ensure to call them within business hours for a swift response.

I recently signed up for QuickBooks and I am having this exact issue. When I create an estimate and send it to a customer and they agree to it an invoice is automatically created and is due in 30 days. I am aware of my ability to change when the due date is but I can't find any settings to stop the automatic creation of these invoices. I see that this has been a problem for people in this discussion for over a year and I think it is quite ridiculous that it is still occurring. Respond to me with any advice or a solution and I don't want a bs response from QuickBooks about how I need to clear my cache or how an invoice is created from a partial estimate payment. There was no payment!!!

I'm here to explain to you everything. At the moment, there's an update for the QuickBooks Online (QBO) estimate and invoice display and features. And what you're experiencing right now is one of the updates.
However, you can still access the old layout. But, the request to deposit is no longer available. Here's how to switch the old feature:
And if you're ready to use the new feature, you can switch back anytime:
You don't need to worry about your existing estimates and invoices since QBO will save all of the info inside it. Also, ensure to review the differences before sending it to your customers, because every time you switch the new and old features, the design shown to your customer will change as well.

Thank you for responding so quickly. I love the new layout I was just wondering if there was a way to send someone an estimate and have them accept it without an automatic invoice being generated. I like to create and send invoices after the work is done. Let me know if I am able to change this in the new version. Thanks

Intuit is committed to providing you with the best experience based on your feedback. That's the reason why we're able to produce and improve a new layout for your sales forms.
As mentioned by my colleague @Bryan_M, you can use the old layout if you don't want your estimates to be automatically converted once the customer accepts the form. However, the request to deposit function may be unavailable.
But if you still want to use the new experience, you can just send a PDF file of the estimate directly through email to ensure that the customer has already an idea of your estimates total amount. Then, once work is done that's the time you can send the actual estimate so it will be converted to an invoice.
