Inventory in QBO does not have sub-products, though you can create a category in the listing and then make it a sub of that category.

Sub-products were replaced by Categories. We use this to keep track of company sales and help organize reporting. If you have a sub-item, you will need to manually add them separately into QuickBooks to accurately account for your inventory quantity and cost.

Austin, I am having this exact problem since January 12th. Did they ever provide a solution for you? I am not able to access the drop down box yet the subproduct box is checked. So frustrating, I have to refresh and redo every single entry to get it to work.
Mine does not say category, it still says sub-product with a drop down box. Maybe the roll out of this 'new' feature is why mine is not working?
they must have removed it then because it shows on pictures on quickbooks online from the past
