The sales tax probably was not set up in the account mapping. That's why it doesn't show up in the invoices in QBO.
To verify if this is the case, it would be best to contact the Zapier support. They can check the account mapping of the transactions, to ensure that this won't happen next time you import the invoices.

This is still not resolved. I am having the same issue.
Whether I create an invoice, or a sales receipt, everything else goes through, but the tax DOES NOT reflect in the Quickbooks receipts.
This is QB's responsibility since it's a "QB" integration. Zapier DOES NOT do the integration.
This is a major deal breaker, please get it fixed.
No matter whether I send the tax rate, or even the shipping location (zip, state, etc.), QB does not accept the tax fields.
You might want to verify if you've set up Sales Tax inside QuickBooks, amod_oke.
When integrating any third-party application to QuickBooks you'll have to make sure the fields are matched to QuickBooks. In your case, you'll have to set up Sales Tax inside QuickBooks. That way, your WooCommerce transactions will be mapped correctly.
Afterward, you can import the transactions to QuickBooks.
If the same thing happens, I'd suggest reaching out to Zapier. They'll verify the account mapping of the transactions.
