I've got some troubleshooting solutions we can perform to get the Contact info page working, finance-themarsh.
I've checked here on our records and there's no reported case where the Contact info changes the business details when clicking the Pencil icon.
There are times when a browser's cache data becomes full or damaged. When this happens, the Contact info page doesn't load properly to provide you the correct information.
To better isolate this one, let's try accessing QuickBooks Online (QBO) on a private or incognito window. This mode doesn't use the existing cache data and helps us confirm browser-related issues.
Just use these keyboard shortcuts below:
If it gives you the correct details in the Contact info page, try clearing your browser's cache to delete those temporarily stored files and browsing history. This is a junk file on the browser that can cause errors on your account.
You can also use other supported, up-to-date browsers to roll out the possibility of a browser-related issue.
If the same thing happens, I'd suggest contacting our Technical Support Team. They'll pull up your account in a secure environment and investigate what's causing this issue.

All browsers are supported browsers and updated
Firefox - new private window - same result
Chrome - new incognito window - same result
Safari - new private window - same result
All new windows initiated from menu to minimize possibility of entering wrong key combination.
I've taken screenshots of all three browsers' info - as shown without edit, and as shown after clicking pencil icon.
I will contact support when they reopen.
