Using QB Mac 2019 up-to-date version Server version. Want to switch over to QBO in the near future to be able to work from home in the evenings on weekends as well as other things, but when I go to File > Export > "To QuickBooks Online" option is grayed out. Not sure how to fix this so that I can start the process. Wasn't sure if it's because I'm using the QB Mac 2019 Server version as well.

Since the QBDT for MAC 2019 is being discontinued this might be the reason why it is grayed out. Below are the steps of how you can move to QBO if you're using a Quickbooks Desktop for Mac version 2019 or older:
After completing the preceding steps, we will proceed to move your data to QuickBooks Online. Before you begin, make certain that your QBO payroll isn't activated. Because once it's turned on, you'll need to create a new QBO company to move your data.
Here are the steps to move your data:
Once you're done moving your data QBO will send a confirmation message. The confirmation may also take up to 24 hours.

Which MacOS do you run?
I believe my work computer is still on MacOS 12 Ventura. Never followed up if QB2019 ran on 13 so I never ended up updating just out of fear of breaking it.
Running QBD 2019 on Monterey? Are you sure?
Or do you mean 10.12 Sierra?

Since the 2019 version is no longer supported, access to add-on services and other functions is now discontinued. To move your data, you can upgrade to a supported version or download a 30-day trial.
Once done, you can now move your QuickBooks Desktop for Mac file to QuickBooks Online.

You can use the trial version for QBD 2021 to upgrade your file and convert it to QBO.
Dumb question, but if I just upgrade to Monterey or Ventura, can I just update to 2023? I don't see the trial link for 2021 on the Quickbooks website.
Also, is 2019 compatible with Monterey and/or Ventura?

Yes, you can upgrade to QuickBooks Mac Plus 2023 if you're using an operating system of at least Mac OS X v12.0 (Monterey).
This OS isn't compatible with QuickBooks Mac 2019. Thus, you'll have to use at least Mac operating systems 10.12 (Sierra), 10.13 (High Sierra), and 10.14 (Mojave).
The option to install QuickBooks Desktop for Mac Plus 2021 is unavailable on the QuickBooks website. Though, you can install our latest trial version instead. Here's our link: QuickBooks Desktop for Mac trial install file.
Before you start, make sure your computer meets the minimum requirements to install QuickBooks Desktop for Mac Plus 2023.
