Is there a way to may a "subtotal" line that will add the total of the items purchased before the line item "sales tax"? Sometimes I have to log just the items purchased and I have to add all the lines, or subtract the sales tax to get a total. Thank you.

Yes. Create and use a Subtotal type item.
From the Items list, start to create a new item and then pick Subtotal as the type:
