You can only convert an estimate to an invoice. You can't convert and invoice to an estimate.
You can, with two tabs open, copy details of an invoice and paste item by item into an estimate

Yes, just_me is right. Though converting an estimate to an invoice is possible, the option to change it back isn't available. We can work on this by manually recreating the estimate and deleting the invoice after. This helps prevent duplicate transactions.
You can also go to Audit Log to check for the details of the deleted invoices.

This is so extremely frustrating! I am not sure how my estimate got converted to an invoce but now I can't get it back. I already spent 2 hours fixing the estimate because of another stupid bug that it has had since 2018 . Now I have to do it all over again??
I have only been using it for 1 day and it is by far the worst experience. How is this the "industry standard"? It would be easier to manage an entire business in Excel than deal with this time sink

Currently, there's no option to convert the invoice back to an estimate. To resolve this, you can recreate the estimate and delete the invoice.
As for the issue of the estimate getting converted into an invoice without your knowledge, you can review the audit log to see who made changes to your transactions and what they did.
