I pay my New York State employees tax each week I can not seem to set it up so it doesn't pay it electronic I pay it on the nys website each week. Online payroll wants me to pay it on the quarter. My Accountant said I should pay it weekly like I have for 20 years.

Online Payroll setup will default based on your previous YTD amounts. You'll want to reach out to your state agency to verify the scheduled payments you have.
Once verified, it would be best to turn off or disable your e-pay bank account in QuickBooks. Here's how:

If you need to change your payroll state tax filing frequency, you can always update it through the Payroll Settings.
If the weekly option is not available in QuickBooks, then you may need to consult with your state agency about this matter on how you can pay the taxes manually.
