I don't know why or how, but how do I change it back?
The template used when emailing invoices may have changed in QuickBooks Desktop (QBDT), @ErinIWW. Let's go to the Preferences window to correct this. I'm here to guide you how.
You may have updated your company's send form preferences to use the plain text format that's why the color design is changed. To change it back, here's how:

Thank you for the suggestion. I followed those instructions, found it was still set properly so I set it to plain text instead, selected OK, and then went back in and changed it back to the proper setting and selected OK again, but it still looks like same.
