Let me share some information and limitations that are involved in formatting of the packing slip in QuickBooks Online.
A packing slip is a document that contains an item, quantity, description, and some information that is needed when shipping products to your customers, part of it also is the heading.
The packing slip is a standard format and cannot be edited. However, you can customize invoices, estimates, and sales receipts to make it personalize and add the information that matters most to your business.

Hi there! I'm having a strange thing happening in QBO -- I cannot see quantity in my packing slips. I see product only. Wondering if I somehow turned something off somewhere? Any tips? From what I'm reading here I should be able to see quantity in the canned uneditable packing slip form. Thanks!

Let’s roll out the possibility of a web browser issue. In time, piled up data causes unusual behavior to the browser’s that affects the views and performance of your QuickBooks Online (QBO) account.
To confirm, let’s open your QBO account via a private or incognito window. You can follow these keyboard shortcuts below:
Once in a private window, try to print your packing slip and check if it shows the quantity column. If it works, then we’ll need to delete your regular browser’s cache to optimize its performance.
If the issue persists, try using other supported browsers. This is also to check if the issue is browser integrated.

Thanks for your reply, JasroV. The problem persists across Chrome, Safari, and Firefox, so I cleared my cache in Chrome (my preferred browser) but that didn't work either. As I understand it I cannot edit a packing slip. Is there something else I could try to get this resolved? Thanks for your help.

Currently, the option to edit packing slip isn't available in QuickBooks. I can see how useful it is to have the ability to edit the ship date of the packing slip. What you can do right now is to create a packing slip out of your customer's invoices. I want to let you know that your voice matters and I'm taking note of this and suggesting it to improve the experience we provide.

Thank you, but please note that it is the item quantity I am unable to see! I'm fine with the ship date. I believe the quantity is normally visible in the packing slip but it's not showing up for me. I can see product only.

You're right that the Quantity column is default for packing slips. See this:
