Join nowI would like to create a report that shows products sold that have a certain category. Example:
Product 1, Product 2, Product 3 were all sold this month. Each has the category, "Consignments". I'd like to see a list of those products.
Is this really not possible?

You're already on the right track in categorizing your products sold with certain categories through a sales report (Sales by Product/Service Detail) in QuickBooks Online (QBO), @beauvinciviolins.
Before we start, I'd like to verify how you set up the category "Consignments" based on your example above? Is it through class, distribution account, or category of the product info?
If the "Consignments" category is set up as a class or distribution account, you need to select it on either the Distribution Account or Class fields while customizing the Sales by Product/Service Detail report. You can also pull up the Sales by Class Detail report to get the details you need.
If the "Consignments" category is set up in the product information (please see the screenshot below for your reference), the option to show it on sales reports is currently unavailable.

Also, when you customize your reports in QBO, you're able to focus on the details that matter to you the most (i.e., filter specific accounts, customers, or format the layout). The category field is associated with the product.
Basically, I need a way to see a list of all of the consignments I've sold within a given time frame. It must be associated with the product. I can not expect employees to memorize with products are or are not consignments and then designate that on the invoice.
I don't think I can associate a class with a product.
How would you advise I accomplish this since I can't view a report of items I've sold with a particular category designation?

Thanks for the screenshot. I can see that LollyNino_C has already provided a good report for your consignment items.
There's no need to customize the Sales by Product/Service Detail. It will automatically group the sold items by category, as shown below.
You can also export your report to Excel if you want to do some changes to it.
