Hi there, @theotillotson. I'm here to provide information about your invoice template concern.

 

In QuickBooks Online (QBO), you'll have to manually change the messages for individual invoice templates. Changes made to the Message on invoice field of the template will be applied to all of the invoices transactions regardless of which template you use. Getting a list of your customers’ outstanding balances will help you determine how much still due and how long they’re past due are. You just simply need to run the accounts receivable aging report to have this data.

Per QBO support, this is actually a known issue. These fields should be unique to each template.
