Here's how:
Once done, you can now start to export individual paychecks: I'll show you how.

Advice is all good until I get to the Accounting Preference screen. There is no option to select to export to Desktop, Is this a new change?
I briefly tried converting to QBO last month, but when I found out I'd have to re-input every piece of my payroll information I chose to upgrade from QB Mac Plus 2019 to QB Mac Plus 2022. Is the fact that Intuit still thinks I'm using QBO even though I cancelled it the reason I can no longer export my payroll transactions to QBDT? And if so, how do we fix that?
I've come to share insights about exporting payroll transactions from QuickBooks Online (QBO) to QuickBooks Desktop for Mac, @GoodScout.
You can make changes to your payroll preferences at any time. The Export option should be available in the Payroll Settings window under the Auto Payroll section. Please see the screenshot below for your reference.
However, since you've already cancelled your account, you can no longer utilize the said option to export your payroll transactions to QBDT for Mac. You can learn more about this through this article: What happens to my QuickBooks Online data after I cancel?.
With this, you can either manually export your payroll reports (if you still have the option to do so) to get the data you need or contact our Payroll Care team to give you other options to achieve your goal.
For the complete list of payroll reports and how you can customize them, please see this article: Run payroll reports.
Also, to further guide you in managing your payroll transactions in both QBO and QBDT for Mac platforms, I'd recommend checking out one of our Help pages: QuickBooks Support. Please select the appropriate product from the Select a product section.
Please don't hesitate to comment below if you have other concerns about exporting your payroll data from QBO to QBDT for Mac. I'm always ready to help. Take care, and I wish you continued success, @GoodScout.
As you mentioned, since I foolishly gave QBO a shot, I don't have the Export section showing on my Payroll Settings anymore (screenshot attached) and thus can no longer download these transactions to the updated version of QBDT I just paid $300+ for.
I'd be fascinated to learn how I could even manually export the transactions, since I can't see any way to do that either.
Failing that, I look forward to a long, long phone call to try and reach your Payroll Care team.

Since you already canceled your QuickBooks Online Payroll account, that's the reason why you're unable to have the Export option in the Payroll Settings. In case you want to resubscribe to easily export your payroll data, you can reach out to our Payroll Support Team to help you reactivate your payroll account.
If you don't want to resubscribe, you can export your payroll data from QuickBooks Online (QBO) to an Excel file. You can run payroll reports to get the information you need. Here's how:
From the report's page, tap on the drop-down arrow under Share, then click on Export to Excel. For some reports, you can click on the Export icon, then Export to Excel. For more tips about handling reports, you can open this article: Run reports in QuickBooks Online.
Once the data are available in Excel, you can convert them to an IIF file from there. To guide you or verify what happens to your transactions once imported to QuickBooks Desktop for Mac, refer to this article: Export Intuit Online Payroll transactions to QuickBooks for Windows or Mac (IIF).

I will give it a try.
FYI, I cancelled my QBO main account.
I retained my QBO Payroll account
in short, returning to where I was prior to trying the full QBO offering.
