Will this change the dates on past entries?

When you update the Date format settings, the changes will also apply to your previous entries. The dates for your past transactions will still be the same, but the format is no longer the same as what was previously set in QuickBooks Online (QBO).

I have a user who doesn't have full access to the accounts but needs to change the date format - how does she do that? It's a shame the date format can't be associated to the customer because we are constantly having to change from UK format to US format in the settings

You can give them limited access to the account. Aside from changing the date format, they can also view other customer and vendor related transactions.
To add them as one of the users, you can follow these steps:
Afterward, they will receive an invite to join the company. Ask them to select the link in the email. They can create a new Intuit Account or just sign in if they already have one.

If I understand correctly, the issue of assigning different date formats to different customers remains unresolved. I, too, have multinational clients, and using exclusively either MMDDYYYY or DDMMYYYY will be confusing for someone. I propose an option to write out the month, showing May 1, 2024 or 1 May 2024 or similar formats to avoid confusion.

I can see the importance of assigning different date formats to different customers and writing out the month of the date. However, it's currently not an option in QuickBooks Online (QBO).

This also makes it impossible to use QuickBooks for invoicing. I have clients both in the UK and the USA and to send them an invoice in UK date format will be very confusing for their accounting department.
I would like to second this request. We do business both in the US and in Europe. Continually switching date formats is not feasible for anyone doing business globally. The option to spell out the month completely takes care of this.

I need to do something simillar (MM/DD/YY) but I have Quickbooks Desktop, how can I do it?
My windows calendar is already modified and while making the invoices I can see the MM/DD/YY format but when I print the invoice it changes DD/MM/YY

Usually, QuickBooks Desktop (QBDT) uses the same date format as your computer. Since you've already verified your device's date format, we can run some tests to see if there's an issue with your QuickBooks program or the company file. Before doing so, make sure that:
Next, test your company file by printing a different form. If you're printing a customized invoice, print a standard one. Consider using another QuickBooks sample company file to print the same invoice. If it works, fix the data damage on your company file.
Otherwise, scan Solution 4 on this article to manually rename the QBPrint.QBP file: Fix printing issues in QuickBooks Desktop. You can also print your invoices to a different printer to see if this issue is printer-related.
