Once turned on, all income and expense accounts will base on the home currency. To have an invoice with Eur (Euro) as the currency, you'll have to create a customer using that said currency. Here's how:
Once done, you can now create invoices with sales taxes using the said currencies. Just ensure to select the customer associated with it.

These 2 steps described above are done. What do I do to create the invoice in Euro? When I create a new invoice even following these steps:
- go to customers
- find the one with EUR
- click 'Create invoice'
I still get the new invoice with $ and there is no way to change the currency
You have to enable the multicurrency feature and it is not available on QBO Simple Start. You may need a workaround to accept payments in EUR but register it in USD.

It's quite strange that your customer's invoice is still in USD even if its currency is already in EUR. Let's check to see what's causing this behavior.
If you haven't already, you can sign in to QBO using a private browser. This step disables its extensions and stops the cache from saving your browsing history. For Chrome, press Ctrl + Shift + N, for MS Edge and Firefox, Ctrl + Shift + P, and for Safari, Command + Shift + N.
If the correct currency is displayed, you can go back to your regular browser and clear its cache. If not, please try other browsers to see if we get the same thing, or contact our QBO Support to check this further using more tools.

Hello Purruno, and for those who would have the same question in the future.
I'd like to clarify that the multicurrency feature has nothing to do with business taxes. It's designed so you can create transactions based on your customer's currency.
The tax set up in QuickBooks Online - USA is only applicable in the US. Therefore, if you invoice a customer with a Berlin address, the tax calculation will be based on your business location. QBO-USA does not support a separate tax setup for other countries.

Make sure the multicurrency feature is turned on and that you've created a customer in Euro. Then, you can choose that customer when creating an invoice. Please take a look at the image below.

You can start by accessing your account using an incognito window. This mode fixes most of the browser issues since it doesn't save any site data. Here are the shortcut keys:
You can then try making a new invoice. If it works, switch back to your default browser and clear the cache. This deletes the browsing history while also refreshing the program. You can also isolate further by using different supported browsers.
