We like using groups for our quotes, but we think the subtotals are confusing to our customers.
1. How do we remove, hide, or gray out the subtotal on the estimate?

You can customize your form so that the Subtotal will not be included in your quotes. I can guide you in doing so.

Thanks for your reply. This is weird, but we do not have the subtotal item listed in the footer section, nor do we have sales tax. Specifically, when I am using grouped items, I do not want the subtotals for the grouped items to show on the quote.

The subtotal will not show in the bottom part if there's no tax on the transaction or the Sales Tax isn't turned on. You'll have to turn on the Sales Tax, so we can hide the added subtotal on the line item. For more details on how to set this up, see this article: Set up sales tax in QuickBooks Desktop.
However, if you're using QuickBooks Online, you'll have to uncheck the Subtotal groups on the Customs Form Style. Let me guide you how:

We ARE using Quickbooks Desktop Enterprise for Manufacturing.
We do not have sales tax turned on because we're not at a threshold to pay sales tax. I wonder if this is why subtotals are not showing? Regardless, it's the Grouped Items Subtotals I do not want to display.

Thanks for confirming that you're using QuickBooks Desktop Enterprise. I'll share other troubleshooting steps to remove the subtotal and Grouped Items Subtotals on your estimates.
Either sales tax is turn on or turn off, you're able to remove the subtotals on your estimates. Since you're unable to see the subtotals in the footer section, I'd suggest going to the Lists to the item inactive.
Here's how:
After that, go to the estimates to check if the columns are invisible.
But if you're referring to the subtotal line item that you add when creating the group of items, we're unable to hide this.

Thanks for providing the screen shot. There is nothing called "Subtotal" in the Lists > Item List. Therefore I cannot make it inactive there.

Let me share some clarifications about deleting the subtotal of group items on estimates. The instructions provided by my colleagues above is on how to delete the subtotal item manually created in QuickBooks. For now, we're unable to delete the subtotal of group items on estimates. Deleting this line will remove the group and all of its member items from the transaction. The only way to leave out the subtotal is to add the individual items on your estimates.
