Yes, we can edit the estimate template and adjust the column widths. Here's how to do it:

Click the Gear icon in the upper-right corner and select Custom form styles.
Look for the estimate template and click Edit.
Go to the Content tab and select the second blurred section.
Go to the COLUMNS section and click EDIT LABELS AND WIDTHS.
Adjust the column widths and select Done.

What about editing the column width in the 'bill to' section? This is outside of the content section referenced in the answer below. There has to be a way to do this, but I've yet to find it.

Hello, AM Quadrant,

The Bill to section is not adjustable. If you'd like, you can submit feedback about this. That way, our engineers will know that you want an option to adjust it. From your QBO company, just click on the Gear icon, choose Feedback, and enter the details.

You can also find and vote on other ideas that you like on the Customer Feedback for QuickBooks Online page.

More crappy "Submit an idea" feedback. It's ridiculously narrow, causing customer names to wrap. QB Desktop is soooo much better than QBO
